Whether you plan to save or splurge, here are some easy ideas to help celebrate
the Mums in your life and make sure they have a fabulous day…
Does your mum love High Tea? (I know I do, hint hint Hubby…).
There are heaps of options this year, so you really can’t go wrong!
Treat Mum to a Victorian High Tea at the Peace and Plenty Inn, or take her up to the 10th floor Rooftop Terrace of the Rydges Hotel where she can enjoy views of the Auckland harbour. Take Mum out to explore MOTAT and stop in for a special High Tea at Cropper House, or help raise funds for Project Hope with a special Charity High Tea at St Anne’s Hall. Treat Mum with Mumm at Stamford Plaza and live entertainment on the grand piano, or take a walk down memory lane at the Howick Historical Village.

Now, spoiling Mum doesn’t have to involve spending a lot of money. Most mums would LOOOVE a good sleep-in and breakfast in bed (and to not have to clean up the mess either haha). If you like our 3-ingredient pancakes but would like to make something a bit more special, here is a super easy and delicious recipe for fluffy buttermilk pancakes:
2 large eggs
2c buttermilk (see note below for if you don’t have buttermilk)
2c self-raising flour
pinch or salt
1t grated lemon zest
pinch of nutmeg
Whisk all wet ingredients together in a bowl. Add dry ingredients and combine well.
Cook pancakes with melted butter over a low-medium heat. They are ready to flip when golden-brown on the bottom and little bubbles have appeared on the top.
Serve with fresh fruit or frozen berries, maple syrup or golden syrup and a dusting of icing sugar. Yummmmm…
NOTE: If you don’t have buttermilk, you can make some using the ratio of 1T white vinegar or lemon juice in 1c milk, sit at room temperature for 10mins.
