Apple Roses

A little time-consuming, but they look stunning and taste great!

Ingredients
red apples (sliced thinly with skin on, use a mandolin if you want to keep the thickness exactly the same)
1T sugar
1c lemon juice (plus enough water to cover the apple slices)
pre-rolled puff pastry
cinnamon
maple syrup

Method
Mix apple slices in a large bowl with the lemon juice and sugar, top up with water to ensure all slices are covered, then soak at least 1 hour.

Cut pastry into quarters length-wise.
Place apple slices, overlapping from left to right, across top half of pastry.
Fold up the bottom half of the pastry, then roll one end back across itself to the other end.
Use a dab of water to secure the end.
Place inside a muffin cup, and into a muffin tray.
Drizzle with maple syrup and sprinkle with cinnamon, then bake until pastry is golden.
Best served fresh out of the oven, but is still delicious cold.
