Broccoli soup

Doesn’t sound terribly appetizing but I promise it’s really yummy – even my kids eat it!
It’s also suuuper easy to make #onepotwonder and is cost effective #winning

Ingredients 
1 large broccoli
1 big bunch kale or spinach
1 large onion
5 cloves of garlic, peeled
3 sticks of celery
1-2L of really good quality chicken stock (or vege stock, we love Simon Gault’s range, Campbells is good too!)

Method
Wash and cut broccoli into small florets.
Peel and cut onion into quarters.
Cut celery into large chunks.
Put everything into a big pot and add enough stock to cover all the veges.
Bring to the boil then, simmer until veges are tender.
Leave to cool slightly and whizz with a stick blender.
Season with salt and pepper to taste.

We like to serve with freshly homemade garlic bread, garnished with finely grated parmesan a swirl of creme fraiche. Enjoy!
