Dairy-free Banana Cake

3 large mashed bananas (defrosted ones are perfect for this)
3 eggs
1t vanilla
1/2c oil (I use sunflower)
0.5c raw sugar
1.5c self-raising flour
1T flaxmeal (optional)

Mix together and bake at 180C for 30-40mins, or until a skewer inserted in the centre comes out clean. This will make one layer.
Serve dusted with a little icing sugar.
