Mexcellent Meatloaf ‘Muffins’

Meatloaf wrapped in bacon. Can’t get better than that right? Wrong! Make it next-level with Pepper & Me Mexcellent paste…

Ingredients
500g mince
1/4c Mexcellent paste
1 egg, beaten
1 small onion, grated
1/2c finely grated carrot
1/2c breadcrumbs
1T flaxmeal (optional)
12 slices streaky bacon
mashed potato (made from scratch, or from potato flakes)

Combine all ingredients (except the mashed potato) and mix well.
Line the sides of the muffin pan holes with streaky bacon.
Divide the mince mixture into 12 portions and roll into balls.
Press balls into the bacon-lined muffin pan holes.
Bake at 180 for about 20mins (or until well browned and cooked through – it will start to come away from the sides as it shrinks).

To finish, swirl mashed potato on top of each ‘muffin’ (I do this with a ziplock bag with the corner cut off). Grind some of Pepper & Me Man Grind on top to finish!

HOT TIP: make double.
